This coffee is produced on selected farms in the Popayan region. The coffee is brought from the growers in dry parchment and is later prepared in Popayan and transported to Caldas where it is decaffeinated. This decaffeination process is unique. The caffeine is extracted using sugar cane and water, which increases the sweetness while preserving the characteristics of the coffee.
