The year 2025 started with record-breaking high prices for coffee which will surely shape the industry shortly. 

In this read, we explore the possible new developments, and current coffee trends and look at how the last year’s coffee trends are holding up.

Current coffee trends

New standards in coffee evaluation

Introduced last year, the new Coffee Value Assessment (CVA) protocol by SCA is now fully in place and is gaining more and more popularity. 

Not a small part of the CVA popularisation is due to the active work of SCA Trainers and CVA ambassadors who are educating coffee professionals worldwide.

The new protocol promises to help better understand the flavor qualities of the cup as well as simplify the flavor profiling process.

Nevertheless, the new CVA format of coffee scoring is facing some criticism from veteran coffee tasters for over-simplification and the need to use a specially designed calculator on the SCA website to finalize scoring results.  

This prompts the creation of virtual cupping assistance tools such as Kavast, Cafe Rose By CafeImports, and CatadorCVA. 

These applications provide cup tasters with a better user experience, better data storage and sorting, and more mobility. 

Moreover, it is speculated that more mobile applications will be developed to replace tools like Colorimeters and others.

Coffee Blends

The current coffee trend of a growing number of coffee blends, including specialty coffee blends, is to maintain its strength in 2025. 

With C-price (coffee price) reaching its record high the roasters are motivated to offer more blends for price mitigation and expansion of line-up without necessarily buying new, more expensive lots.

Specialty coffee is the new mainstream

With Specialty coffee becoming more widespread in 2024 than ever before we expect higher demand for it in 2025. 

Despite ever-rising prices for coffee, Specialty coffee should continue growing its market share as well as its diversity in processing methods and varieties. 

With higher prices overall we expect a growth in appreciation of craftsmanship connected to all that is specialty coffee, which in turn will increase its value in the eyes of both continuing and new consumers. 

Moreover, with a higher cost of a cup of coffee at the cafe we expect a steady growth of homestead coffee consumption.

He has trained over 300 students in various coffee disciplines and holds certifications such as SCA Barista Skills Professional, Sensory Skills Professional, and Brewing Intermediate, culminating in the SCA Coffee Diploma in 2023.
