The processing of this premium coffee begins with the precise reception and weighing of the freshly picked coffee cherries. This is followed by a careful classification process where water recirculation is used to remove floating cherries, while ripe cherries are separated from immature and overripe cherries. In order to achieve the highest quality, an additional electronic selection process is carried out to ensure that all unsuitable beans are carefully eliminated. The coffee cherries are then dried using the traditional natural method, which takes between 20 and 25 days. The entire process is carried out under strict supervision, with the temperature never exceeding 40°C. The cherries are carefully stirred at all times to ensure even drying and to preserve all the valuable aromatic qualities of the coffee.
